  • Divided into two parts:

    • Short Loin (closer to the front):

      • Cuts: T-bone, porterhouse, strip steak

    • Sirloin (closer to the back):

      • Cuts: Top sirloin, bottom sirloin, tri-tip

      • Cortes: T-bone, porterhouse, New York strip

    • Sirloin (Lomo de Cadera) – más hacia la parte trasera
